Let's talk about the Marche region by talking about our wines

Ribona Colli Maceratesi DOC

Organic wine from sustainable viticulture

100% Maceratino GRAPES

HOW WE DO IT:

We harvest the grapes by hand in small crates, then press them by adding dry ice to limit the oxidation process. After static decantation, we ferment the wort at a low temperature. Then we pour the wine into steel tanks where it ages for about six months; We complete the aging in the bottle.

TASTING NOTES AND PAIRINGS

Straw yellow in color, the nose offers a delicate scent of pineapple and white peach. The acidity and flavor guarantee a certain backbone. Fresh and “nervous”, it goes very well as an aperitif and goes well with appetizers, with preparations that include eggs and with all fatty and sweet-leaning foods, such as our ciauscolo.

Serving temperature between 12 and 13° C

Ribona della Famiglia

Colli Maceratesi DOC
Organic wine from sustainable viticulture

100% Maceratino GRAPES

HOW WE DO IT:

Towards the end of the harvest, we harvest three equal masses from a single vineyard on the same day and process them separately. An important part is not destemmed, the whole grapes are gently put by hand in the press. The free-run must is decanted and sent to 3 dedicated tanks, 2 in cement and one in wood, where it ferments at a low temperature. The wine rests on the lees for at least 12 months and is then blended into a cuvée, favoring the tanks that have given the best result.

TASTING NOTES AND PAIRINGS:

On the nose, hints of citrus, white flowers and honey with a hint of enamel can be distinguished. In the mouth it is well supported by acidity and mineral component, which give it flavor and persistence. The balance, structure and important acidity make it a passepartout wine that can be used as an aperitif to red meats.

Serving temperature between 12 and 13° C

Marche Bianco IGT

Organic wine

100% Verdicchio GRAPES

HOW WE DO IT:

The grapes are harvested by hand in 12-13 kg crates and crushed in a soft press without destemming. The must is cold decanted and then left to ferment cleanly. After fermentation, the wine remains 3 months in steel on the fine lees and 4 months in cement, then it is bottled.

TASTING NOTES AND PAIRINGS:

The 2022 harvest was opulent and the wine reflects the season. The calcareous soil on which Verdicchio is grown and the north-east exposure give the wine finesse and verticality – In the mouth it is dry, persistent and warm, with a mineral note common to our other wines.

White meats, pasta dishes and pizza.

Serving temperature between 12 and 13° C

Piceno DOC

Organic wine from sustainable viticulture

Grapes: Montepulciano 85% Sangiovese 15%

HOW WE DO IT:

We harvest the Montepulciano before it is fully ripe and the Sangiovese slightly overripe. In this way we can benefit from the acidity and structure of the former and the elegant tannins of the latter. The hand-picked grapes are destemmed and transferred to ferment in concrete and steel tanks. The red wine ages in small oak barrels for at least 15 months. Numbered bottles on the label.

TASTING NOTES AND PAIRINGS:

Long-lived wine with an intense and brilliant ruby red color, characterized by ripe morello cherry, vanilla and cocoa. In the mouth it is rightly warm, savory, with vigorous but balanced tannins. The freshness that distinguishes the initial phase of the tasting is followed by a long and persistent finish where the olfactory notes re-emerge. Typical wine throughout the meal: excellent with soups, pastas and risottos. It enhances both simple and important red meat dishes and medium-aged cheeses.

Serving temperature between 15 and 16°C
